Transformation Tuesday!!

I think all too often we like to focus on just the physical transformation and today I would like to spotlight a new coach in my downline.

This is her transformation and in 21 days she changed her body on the outside, she lost 10 lbs and 10 inches, but more importantly she had an internal transformation as well. I had the pleasure of talking to her yesterday and I was absolutely blown away with her story.

Here is what she told me:
–> She’s no longer depressed or anxious.
–> She feels confident again and she hasn’t felt that way in years.
–> Two serious health issues, that she’s been dealing with for years are correcting themselves.

She followed the 21 Day Fix meal plan completely, did her workouts and drank Shakeology. Her life is completely different and the happiness I saw in her eyes was priceless!

Eat your veggies!

Are you eating your veggies?

I love salads but after awhile they get kind of boring. My favorite way to cook veggies is to roast them in the oven.

Today’s medley: brussel sprouts, carrots, butternut squash and red potatoes.

Directions: Roast them in the oven at 425.  Take them out when they’re fork tender.

These numbers might not mean anything to you personally but it represents a group of women coming together and working hard on their goals for 21 days.

21 Day Fix: Breakfast Sandwich

This is a simple breakfast to make and eat on the go!!

What you need:

  • 2 eggs
  • 1 tomato
  • a handful of spinach
  • 2 pieces of whole grain toast (I LOVE Good Seed bread by Dave’s Killer Bread)

Scramble your eggs, toast your bread, slice the tomato and assemble the sandwich.

IT’S THAT SIMPLE!!! 

I don’t add any butter to my bread and I don’t miss it at all.   Sometimes I add a few dashes of hot sauce or Sriracha to give it an extra kick.

This breakfast fills me up for several hours and it’s perfect after a hard workout!

Food Matters: Spaghetti Squash

Spotlight on…SPAGHETTI SQUASH!

I just started using spaghetti squash in place of noodles when I eat spaghetti and it’s delicious!

Spaghetti Squash gets its name because when it’s cooked the inside flesh pulls apart and into long strings and looks like spaghetti pasta.  Spaghetti Squash is considered a summer and winter squash and is available year round at the grocery store.

Benefits of eating Spaghetti Squash:

  • It’s full of a wide variety of vitamins; Vitamin C, A, B-6, Niacin, Thiamin and Folate to name a few.
  • It has a good dose of fiber which will keep you full longer.
  • Spaghetti Squash is a great alternative to high-calorie, high-carb traditional pasta.
  • With only 42 calories and 10 carbs in a 1-cup serving of cooked spaghetti squash, this vegetable is a safe addition to any diet.

How to Prepare Spaghetti Squash:

Cut the spaghetti squash in half and remove the seeds from the middle.

Place in baking sheet upside down and add 1/2 cup water to the pan.  Bake for 30-35 minutes at 350 degrees; until it’s fork tender.

Rake a fork back and forth the flesh to make strands like spaghetti.

Snack Alert:
I start to drag around 2PM every day and I always have an afternoon pick me up. I usually eat hummus and veggies but I’m really tired of it. I decided to find a new alternative and I think I found a winner. I finally tried Justin’s Almond Butter and it was AMAZING!

This snack gave me a great pick me up because the almond butter has a good amount of protein in in and it kept me full until dinner.

I have always loved peanut butter but this beats peanut butter any day! It comes in several different flavors including maple, vanilla and plain.  They also have a chocolate hazelnut butter that’s comparable to Nutella but healthier.

My Favorite Shakeology Recipe

I love Shakeolgoy because it’s a quick way for me to have breakfast on the go each morning.  My mornings are always rushed and I don’t have time to sit down and eat a meal.  But I always have time to throw my Shakeolgoy in the blender.

My Favorite Shakeology Recipe:

1 scoop of chocolate Shakeology

A splash of vanilla extract

A teaspoon Cocoa Almond Spread

10 oz of water

1 1/2 cups of ice

Blend and ENJOY!!

Chicken Fajita Stuffed Peppers

If you’re looking for a delicious and healthy meal, this is the recipe to try!!  These peppers are stuffed with so much flavor and healthy ingredients you won’t be disappointed.  They are very easy to prepare and they’re 21 Day Fix Approved!!

First step is too cook 1 lb of chicken, I prefer to use chicken tenderloins because they cook quicker,  in a little extra virgin olive oil with homemade fajita seasoning (recipe at the bottom of the page).

While the chicken is cooking bring a big pot of water to boil and prep your peppers by cutting them in half and removing the seeds.  Once the water is boiling, drop the peppers in the water for about 3 minutes.

Once the chicken is cooked through remove it from the pan and dice it up and add a chopped onion and garlic to a pan and sauté them until tender and translucent. Drain and rinse the black beans and add them to the pan. Add frozen corn, cooked brown rice and can of Rotel (don’t drain) to the pan.  Dice up the chicken and return it to the pan.  Finely mince some fresh cilantro and add the juice of half a lime.   Season with salt and pepper and a little more fajita seasoning to taste.

Place the halved peppers in a shallow baking pan and add 1/2 cup of the chicken fajita mixture to each pepper.  Add a small amount of water to the pan and cover with foil and bake at 375 for 20 minutes. Remove from oven, uncover and sprinkle a small amount of cheese onto each stuffed pepper and return to oven for 3-5 minutes or until the cheese is melted.

Chicken Fajita Stuffed Peppers

1 lb of chicken tenderloins

4-6 bell peppers of any color

2 cups of cooked brown rice (1 cup dried)

1 can black beans

1 can Rotel

1 cup of frozen corn

1/2 cup of shredded cheese, divided to each pepper

1 onion

1/2 lime

cilantro

Fajita Seasoning

2 tsp chili poweder

1 1/2 tsp paprika

1 1/2 tsp cumin

1 tsp onion powder

1 tsp garlic powder

1 tsp salt

dash of cayenne pepper to taste

1 serving= 2 stuffed peppers

1 Red, 2 green, 2 yellow, 1/2 blue
