21 Day Fix: Breakfast Scramble

I love a breakfast scramble.  What’s better than taking your favorite things and putting them all together at once?

Here’s what you’ll need:

  • 2 eggs
  • potatoes
  • tomatoes
  • onions
  • avocado
  • hot sauce (optional)

Here’s what to do:

  1. Cook your potatoes in the microwave
  2. Add veggies and cooked potatoes to a pan and cook them until desired doneness (I like to give them a little color)
  3. Scramble your eggs in a pan
  4. Add the avocado at the last minute.
  5. Place in a bowl and add hot sauce if desired.

YUMMY!
