BulletProof Coffe

Someone told me about Bulletproof Coffee a couple of months ago and I cringed.

Coffee + coconut oil + egg yolk + grassfed butter = No Thanks!

But curiosity got the best of me and I decided to give it a try. Although, I left out the butter and the egg yolk.

All you have to do is put your coffee in the blender, add some coconut oil and blend it up for a minute. It became so frothy and delicious. I gave up coffee creamer a few months ago and I will add coconut oil a couple times a week for a tasty treat!

One Pan: Mexican Quinoa

Mexican Quinoa

This delicious, one pan meal is 21 Day Fix Approved and very easy to prepare!

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 pound of chicken breast
  • 1/2 jalapeno, diced
  • 1 cup of quinoa
  • 2 cups of chicken broth
  • 1 (15 ounce) can of black beans, drained and rinsed
  • 1 (14.5 ounce) can of Rotel
  • 1 cup of corn
  • 1/2 red onion
  • 1 cup of carrots
  • 1/2 cup diced peppers (I used red and orange)
  • 1 tablespoon homemade taco seasoning (see recipe below)
  • Kosher Salt and pepper to taste
  • Juice of 1 lime.

Optional ingredients (things I wanted to add but didn’t have on hand!): Avocado and cilantro

Taco Seasoning:

  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Cumin
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Black Pepper
  • 1/2 Teaspoon Coriander
  • 1/2 Teaspoon Dried Oregano
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Cayenne Pepper

Directions: 

Gather all of your ingredients

Season your chicken with homemade taco seasoning and cook in pan until cooked through. Remove chicken and dice it up.

Add jalapeño, peppers and onion to the pan and cook for 3 minutes.

Add these ingredients to the pan: quinoa, chicken broth, beans, corn, carrots, rotel, taco seasoning.

Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in diced chicken, avocado, lime juice and cilantro.

You could also serve this in tortillas as a healthy taco filling too.

Success Takes Sacrifice

I heard this a few days ago and I’ve been processing it for days. It’s one of those quotes that really hit me in the gut with it’s truth.

SUCESS TAKES SACRIFICE.

If you want to change your life sometimes that means sacrificing a part of it to grow.

This quote can apply to so many areas of my life right now.

Health: I want to be healthy for my kids and often feel overwhelmed that I don’t have time to workout. Sacrifice: I have to give up some time with them to take care of me and I can’t feel guilty about it.

Finances: I want to continue to build our savings account but I also want to buy a lot of things. Sacrifice: Letting the things I want go and focus on only the things we need.

Business: I want to grow my business and lead our family into financial freedom. Sacrifice: My leisure time. It’s not going to grow if I’m not doing anything with it.

I’m learning that success takes work, success takes time and success takes some sacrifices. Sacrifices might seem hard but they’re small things that lead to success. A sacrifice can be a short term loss for a long term gain and you need to have a strong vision that that sacrifice is leading you to success.

Workout Wednesday: Leg Day

Workout Wednesday: LEG DAY!

The legs are HUGE calorie burning muscles and building up muscle in them will help your body burn fat when you are at rest. Don’t be afraid to pick up a set of weights and squat! They will not make you bulky. Lifting weights will just help you have toned legs to show off in shorts this summer!

I did this leg workout yesterday and it was AMAZING! I have a love/hate relationship with training my legs. I love the results that using weights brings but let’s just say that stairs, sitting on toilets and walking is all painful today. I like to be sore because I visualize the soreness as my muscles growing. It hurts so good!

If you want to try this all you need is a set of dumbbells. I used 15 pound weights but you could do this workout with light weights if you are a beginner. It took me about 30 minutes to go through all sets with short breaks in the middle to catch my breath.

Shakeology 3 Day Cleanse

I’m finally done with the Shakeology 3 Day Cleanse. This is exactly what I needed to refocus my mind and detox my body.

Results: I lost 5 lbs but didn’t take measurements but I know I lost a couple inches off my waist because all of my bloating is gone.

The question I always get about this cleanse is “will the weight stay off?”

First of all, now that I’m done I’m putting my scale away for awhile. I only get on my scale when I’m doing a cleanse or following a new fitness program. Second, everyone’s weight fluctuates up and down a few pounds. I don’t use the scale as a measurement of my success. It’s just a tool to show that I’m detoxing my body and losing the bloating that was plaguing me.

But every time I’ve done this cleanse my body has felt fantastic and has stayed the same shape afterwards until I let my eating slide again. Will it go up or down from here? I’m not sure because I don’t plan on being a slave to the scale. The point of this cleanse wasn’t to lose weight but to detox my body and refocus my mind.

My story: Before and After

I remember seeing this family photo after it was taken and cringing. I had a smile on my face but inside I wasn’t happy and I was thankful Phoebe’s head covered my stomach. I was overwhelmed, frustrated, resentful and unsure how to find the time to take care of myself. Before I had Austin I had been running but after having him I didn’t know how to juggle all the chaos.

Day after day I tried not to think about how unhappy I was but eventually I couldn’t take it anymore and I had to do something different. When Austin was almost one I decided it was time for me to put myself back on my priority list. It was time for me to love myself enough to find the time to change. I didn’t take a before picture because I was unhappy with my body. Looking back now I wish I would have taken one so I could see how far I’ve come.

It’s been a long journey, filled with a lot of ups and downs. I’ve had setbacks and injuries but I’ve had so many victories too. I’ve ran countless miles pushing a jogging stroller, done hours and hours of workout DVDs and the best part isn’t that I’m smaller or wear a different size. My victory is in that I’ve found me. I’ve found a passion to help others. I’ve found a career. But more importantly I’ve found that taking care of me helps me take care of others better.

Why do I share all of this? 
Because I understand how it feels to be overwhelmed and unsure of where to start.
Because I know how it feels to be unhappy but stuck at the same time.
Because I know the fear of failure and lack of belief in myself.
Because I know that if I can change my life, so can you.

Because I know I can help you too.

Snack Alert:
I start to drag around 2PM every day and I always have an afternoon pick me up. I usually eat hummus and veggies but I’m really tired of it. I decided to find a new alternative and I think I found a winner. I finally tried Justin’s Almond Butter and it was AMAZING!

This snack gave me a great pick me up because the almond butter has a good amount of protein in in and it kept me full until dinner.

I have always loved peanut butter but this beats peanut butter any day! It comes in several different flavors including maple, vanilla and plain.  They also have a chocolate hazelnut butter that’s comparable to Nutella but healthier.

Spicy Asian Cucumbers

I love eating cucumbers as a snack and I recently made this recipe and I love it!

2 cucmbers

1/2 cup rice wine vinegar

1/4 cup white vinegar

1/4 cup water

1 tbsp sugar

1 tbsp soy sauce

1 tsp salt

1/2 tsp red pepper flakes

—> Peal and slice the cucumbers and put them in a container.  Add the remaining ingredients and mix.  Cover with lid and put in the fridge.  They’re ready after just a couple hours.

I snack on them or toss them into a salad. They don’t last long around here either!
